The controlled proofing chamber of SALVA’s FC range is a cabinet that incorporates a cooling unit, electric heating elements and a humidity producer and in which direct proofing, controlled proofing and retarded proofing can be carried out. It is an air-conditioned space made up of one or more cells for the introduction of storage or baking trolleys and allows for the precise programming of the proofing of dough for bakery and pastry products.
